The ALPSP membership list at http://www.alpsp.org/Ebusiness/AboutAlpsp/ListofMembers.aspx should help establish which of the societies is involved in academic publishing. It also contains commercial, non-UK and suppliers and consultants; but the core membership is UK learned societies.

For Open Data Day, I started pulling together a list of UK based professional organisations and learned societies in the UK with a view to releasing this as open data when I've something vaguely organised and tidied up.
