Yes, my reasoning is that we're working with opening data, thus I
believe we should communicate via open protocols & technologies. Perhaps
we even can make open data out of it!

This is possible. However, what I'm wondering is if we really need to
see live video stream of everyone?

Yes. If we don't need videoconferencing, voice conferencing & chatroom
through Mumble would be enough. There are lots of public & secure
servers we can just hook up to. I personally think this is enough, video
is bandwidth heavy at least on server-side with any open/closed
technology as it is today.
If we need videoconferencing (& ability to stream to browsers), the
JitsiVideobridge would be suitable.

Streaming to browser (Firefox Support Coming) -
I personally don't have access to servers right now to set up SIP-server
to provide the videobridge. If anyone do please feel free to look into
how to deploy it and we could connect through that. OKFN could possibly
set this up in the IT-infrastructure for the organisations' volunteers.
