Hi Guillaume,

what CKAN version are you running? Special characters in tags work for me 
on CKAN 2.5.2, see for example

https://transparenz.karlsruhe.de/dataset?tags=g%C3%A4ste

In any case, can you post the full error message you're getting or 
describe the problem in more detail?
