You are right, some of those fields are not used at all. PyBossa started as
migration of the framework BOSSA and we used the same DB structure as we
wanted to be backwards compatible. While some of these fields have not been
used yet, I guess that in the future some of them will and others not (if
you check the model.py file you will see that in most of the cases there is
a TODO comment about it).

Go ahead and use PyBossa.com. My recommendation is that if you can, you
have your own server to play with it, but feel free to use the official
server :-)
