[Open-data-census] Census Data from Spanish speaking Latin American countries

Hi Daniele,

That would be great! We have two editors in Argentina, Yamila & Jorge, but
both Chile and Uruguay is a bit of a blind spot right now. So if you can
help us reach out that would be highly appreciated.
